Ingredients: red tomatoes, basil, chives, salt, chilli pepper, black pepper, extra virgin olive oil, Tuscan bread (alternatively, sandwich bread).
Preparation:
- Sear red tomatoes for a minute, in order to make their skin peeling easier (if you like, you may also remove seeds).
- After removing the skin, chop the tomatoes.
- Finely chop up the basil, chives, garlic and, if you like, the chilli pepper (you may also add other herbs).
- Add the minced herbs to the tomatoes and mix, after adding salt, extra virgin olive oil and, if you like, black pepper.
- Slice and toast the bread.
- Garnish the bread with the tomatoes and the herbs you have prepared.
- The crostini are ready to be served!
