Toasted bread with red tomatoes and extra virgin olive oil

 

Ingredients: red tomatoes, basil, chives, salt, chilli pepper, black pepper, extra virgin olive oil, Tuscan bread (alternatively, sandwich bread).

Preparation:

  1. Sear red tomatoes for a minute, in order to make their skin peeling easier (if you like, you may also remove seeds).
  2. After removing the skin, chop the tomatoes.
  3. Finely chop up the basil, chives, garlic and, if you like, the chilli pepper (you may also add other herbs).
  4. Add the minced herbs to the tomatoes and mix, after adding salt, extra virgin olive oil and, if you like, black pepper.
  5. Slice and toast the bread.
  6. Garnish the bread with the tomatoes and the herbs you have prepared.
  7. The crostini are ready to be served!
